Beer braised pork cheeks

I wanted to share with you one of my favorite recipes, it's the pork cheeks braised in beer

The cheek costs between 8 and 14 euros per kilo

And for those who do not like beer, it is enough to replace it with cider, wine, a broth …

First, you need to get pork cheeks.

Go to your butcher. You should know that pork cheeks are part of the offal.

At first glance nothing glamorous. But the cheek has a separate status, it is sold like meat. But above all, it is even better than just sautéed pork because super melting! 

Regarding beer, I took blonde. But you can very well put brown beer if you like, it goes perfectly

But let's move on to the recipe

Preparation: 30 minutes

Cooking: 1 hour and 30 minutes

Serves 4

  • 1.6 kg of pork cheeks
  • 2 onions
  • 4 shallots
  • 2 cloves of garlic
  • 6 turnips
  • 4 carrots
  • 1 bouquet garni
  • 20g raisins
  • 3 slices gingerbread
  • 40 cl beer
  • Oil
  • 4 juniper berries
  • Salt and pepper

Realization

 

Step 1

Peel onions, garlic cloves and shallots. Slice them.

Step 2

Heat the oil in a cast iron casserole or a large pot of a minute casserole, add the cheeks. When they are coloured on all sides, remove them.

Step 3

Sauté onions, shallots and garlic. Pour 2 c. tablespoon of boiling water and scrape with a spatula to loosen the cooking juices.

Step 4

When the onions are translucent, put the meat back on, add the bouquet garni, the grapes and the juniper berries. Season with salt and pepper. Pour in the beer. Cover and simmer for 45 minutes over low heat.

Step 5

Peel the turnips and carrots, cut them into small pieces. Add them to the casserole and continue cooking for 30 minutes.

Step 6

Cut the gingerbread slices into small cubes. Brown them quickly in the hot butter. Spread them over the meat on the plates.
