Hello the greedy
I wanted to prepare a quick meal to take on the go, so I opted for a club sandwich with fresh goat to which I added avocado and cooked red beetroot. You'll see it's a treat.
If you don't like goats, fresh cheese will do just fine
Preparation: 15 minutes
- 12 slices of cereal or wholemeal bread
- 2 ripe avocados
- 1 lemon
- 1 cooked beetroot
- Salt, pepper
- 50g rocket or mash
- 150g sweet goat cheese, crumbled
Mayonnaise lightened home
- 1 egg yolk
- 1 tsp mustard
- About 20 cl of oil
- 2 tbsp Greek yoghurt
- 1 tsp balsamic vinegar
- Salt, pepper
Wash and zest the lemon. Squeeze the lemon
Peel the avocados, dice the flesh and mix them in a bowl with 1 or 2 tablespoons of lemon juice.
Dice the beetroot. Mix the diced beetroot with 1 tablespoon of lemon juice, salt and pepper.
Make a classic mayonnaise by mixing the yolk with the mustard. Add salt and pepper and drizzle with oil.
Relax with 1 tbsp of balsamic vinegar and then add the yoghurt. Your "light" mayonnaise is ready
Spread mayonnaise on 8 slices of multi-grain bread and spread arugula, avocado, beetroot and goat cheese pieces over bread.
Stack two slices of bread topped on top of each other and cover with the last slices.
Place club sandwiches on four plates, cut them diagonally and plant a skewered spade in each piece.
