Pancakes are a specialty of the North American continent. They are also known to be served with maple syrup for example.
This recipe of pancakes, I realized for a long time, but rarely for breakfast. Occasionally snack with maple syrup and most often in salted version.
Yes, for dinner, transform these pancakes by garnishing them and serving them with a salad.
What I do most often are mini versions, like blinis, and I use them as toasts for the aperitif.
Preparation: 20 minutes
Cooking time: 10 minutes
- 3 whole eggs
- 30g caster sugar
- 175g flour
- 1 packet of baking powder
- 2 tablespoons oil
- 5g fine salt
- 20 cl whole milk
- 1 pinch cinnamon
- butter for cooking
Add flour and baking powder. Whisk again. Add oil, fine salt and a little cinnamon.
Whisk again, then add the whole milk. You get a kind of pancake batter, a little thicker.
Heat a small frying pan if you make the pancakes one by one or a larger frying pan if you make several at the same time.
Melt a small piece of butter, then pour in a little pancake set.
For this recipe, I made the pancakes one by one by pouring 3 tablespoons each time. To make the blinis version, a tablespoon or teaspoon will do the trick.
When the top of the pancake bubbles, turn it over.
Check the cooking underneath and place the pancake on paper towels. Continue this way until the device is exhausted.
So you can serve these warm pancakes with syrup, honey, jam, red fruit, make a complete meal and or turn them into toast for the aperitif.
