Pan-fried zucchini curry

I suggest a pan-fried zucchini curry to accompany for example meat or poultry

We are in the middle of the zucchini season. It's time to enjoy it. Combined with curry, it's a pure delight!. I recommend the curry of Madras de Terre Exotic that I use quite often I must say and that I like a lot because of its quality and flavor.

Keep zucchini well

Zucchini is a fragile vegetable. It is better to renew your purchase frequently than to risk throwing it away. Keep it for 4 or 5 days in a cool, dry place

Serves 4:

  • 2 onions
  • 4 zucchini
  • 15 cl liquid cream
  • 2 tbsp Madras curry
  • Olive oil
  • Salt, pepper




Step 1

Peel and finely slice the onions and fry for 3 to 4 minutes, covered in a frying pan.


Step 2

Wash the zucchini, cut them in half lengthwise, remove the seeds and dice them.


Step 3

Place the zucchini dice with the onions in the pan and cook for 10 to 15 minutes, stirring occasionally.


Step 4

When the zucchini are cooked (but not too much either), add the curry, cream and salt. Mix well and remove from heat.
