Salmon and spinach quiche

Hello greedy friends

Today I suggest you enjoy a delicious quiche with salmon and spinach for your lunch, what do you say?

This is a very simple recipe and even better when you make your own batter. This paste is not difficult to make in itself, you just have to follow certain rules. To get the recipe, you saw just click on the link in blue

I cooked the salmon in short broth, which I give you the recipe for, to have more flavors. But you can poach it simply with simmering water or steam

Preparation: 30 minutes

Cooking time: 25 minutes

Serves 6

For the broken dough

  • 250g flour
  • 125 g butter
  • 5 cl water
  • 1 Pinch of salt

For the short broth

  • 1 carrot
  • 1 onion
  • 1/2 lemon
  • salt, black peppercorns
  • 2 litres of water
  • 50 cl white wine
  • 1 bouquet garni (leek green, parsley tails, thyme, bay leaf)
  • 350g fresh salmon

For the flan device

  • 25 cl cream
  • 3 eggs
  • 15 cl milk
  • 60g grated cheese
  • Salt, pepper

Step 1

Prepare the broken dough, just click on this link to get the recipe

Step 2

In a saucepan of salted water, cook spinach for about 15 minutes. Then drain well in your hands and let stand in a colander

Step 3

Place sliced carrots, minced onion, salt, peppercorns, water, white wine and bouquet garni in a saucepan. Add the squeezed lemon

Bring to a boil, skim frequently with a skimmer…

Cook for about 20 minutes at a simmer. The short broth is ready.

 

Step 6

In another saucepan, cook salmon in short broth for about 5 minutes, then drain and crumble

 

Step 7

Put the dough in the pie pan.

Prick it with a fork and put baking balls to prevent the dough from deforming during cooking: cook the batter blank for 8 to 10 minutes.

Remove the dough from the oven and remove the marbles

 

Step 8

Spread well-drained spinach and crumbled salmon over top

 

Step 9

In a bowl, break the eggs, add the cream, milk, salt, pepper and a pinch of nutmeg. Pour flan over pie and sprinkle with grated gruyere

Bake for 25 minutes at about 200oC (Th 6/7)

 

You can serve this quiche with salmon and spinach with a good green salad

To accompany this quiche with salmon and spinach, I suggest you taste a Riesling from Alsace, it's a delight!
